Back-to-school lunch box ideas
Well, it’s almost here! Those summer holidays do fly by, don’t they?! It’s time for the kids to go back to school next week, and if finding ideas for their lunch boxes each and every day fills you with dread, let Mudd and Co share some of our favourite ideas with you…
Food on sticks: Staying with sandwiches day in, day out can get boring to make, not to mention boring to eat. So how about getting creative with some kebab style treats? Chop up some cherry tomatoes, celery or cucumber and slide onto mini skewers with cooked chicken pieces.
Pasta salad: It’s easy to make a big batch of pasta salad and can be kept in the fridge for both the kids and adults to tuck into for a few days! Boil up some pasta and add to a large bowl. Toss with cherry tomatoes, spring onions, cucumber, celery, peppers and some mayonnaise and mix together. Spoon a lunch-sized amount into a tub and keep in the fridge overnight. Don’t forget to pack a fork to eat it with at lunchtime!
Be bread-venturous: Don’t just opt for the standard cut loaf if you and your kids do want to have a few bread lunches over the week. Switch it up and go for pitta breads, wraps or Brioche buns to give lunchtime a little twist.
Pastry treats: Of course you want the lunches to be as healthy as possible, but what’s a little Friday treat now and again?! Grab a roll of pre-made pastry, roll it out and add a long cylinder of sausage meat mixed with sage and a little onion chutney. Roll it up, bake for 20-25 minutes, chop into lunch-size portions and leave to cool. Delicious home-made sausage rolls made simple!
